This was fascinating...

The center part of the banana bunch had this...thing in there. When he scored the perimeter with a knife, he could pull it apart like this, but the strands would expand as he pulled. The crazy thing was the strands were like thread fibers...not stretchy at all. It's like they were coiled up inside there.
