That is the Cacau frit, at least that is what we call it in Guatemala. That is where chocolate comes from.

That is correct Carlos. Pretty nasty looking to be so good. (after refining and mixing with other ingredients of course) We've got some 100% cocoa chocolate bars here, and they're so bitter it'll knock you out! We like to trick our friends into trying them, then let them wash the taste out with a swig of Jones "Lemon Drop Dead" soda, which is so sour it's like drinking a Warheads candy. >=)
